Views were spectacular
Location, location, location! The Mirador del Valle (the viewpoint of the valley) is a little better for photography - however the view from the Parador terrace is around 80 to 90% of that view. The view from the Mirador del Valle is better because while the Parador is almost directly above (a few hundred feet uphill) from the Mirador - there are trees on that side of the hill which obstruct the view a bit from the Parador terrace. However on the plus side you can be sipping wine on the Parador terrace and have a great experience. In our case, we checked in to the hotel around 12:30 pm and went to Toledo town for lunch & sightseeing (Cathedral) by taxi. On the way back we stopped at the Mirador del Valle for 5 minutes (keeping the taxi waiting). Then we spent the evening on the terrace/cafe sipping wine as well as eating sandwiches/desserts. Overall the hotel facilities are good, rooms were good/spacious even if not outstanding.
The location outside town means that the eating options are limited to going to the Toledo town or the hotel restaurant. Looking at the menu, the hotel restaurant did not seem to have many vegetarian options (if there were any). We had to make do with the vegetarian sandwich in the cafe.
The location of the hotel might not be convenient if you'd like to walk around old streets of Toledo, but its location is rather unique and for a reason. The view from the patio of the hotel is stunning! you can have a bird-view of the whole Toledo. The view is no where else to be found and definitely renders the hotel worth staying. The building of the hotel is also filled with history and stories, old but the inside of the building has been renovated anew to become the hotel. You definitely want to include the breakfast in your booking as not just because you might find it difficult to find somewhere else for breakfast (given the unique location of the hotel) but the breakfast is excellent. Plenty of choices including local delicacies and more common cuisine. Strongly recommend.
Getting to/from the hotel might be a little tricky if you're not driving yourself. From/to the train station, it takes about EUR 8 for a taxi ride. Public transportation is also available (No. 71 bus) but not that frequent.
